WA Meat Up Mobile Butchery Workshops
The Mobile Butcher Truck is Bringing WSU Meat Science Workshops to butchers and meat producers around the state.
TWO GREAT OPTIONS:
1. Hands-on 3-Day Species Specific Workshops
Learn about the whole process from feeding hogs to cooking chops! We will go over feeding programs, live animal evaluation, harvest, carcass evaluation, carcass breakdown, and creating value-added products. Participants will work in teams to value, purchase, and breakdown a whole hog to maximize value, quality, and palatability.
Day 1: 12:30pm – 7:00 pm
- Hog evaluation, mock auction, harvest, & panel on marketing and distribution.
Day 2: 8:30 am – 7:30 pm
- Pork fabrication & additional processing, feeding for quality, meat evaluation.
Day 3: 8:00 am – 1:45 pm
- Overview of key resources, measuring carcass quality, awards.

The Washington State Department of Agriculture (WSDA) Regional Markets Program and invited presenter hosted a webinar covering available USDA technical assistance opportunities and an upcoming USDA grant for meat processors. Chris Roper, Regional Technical Assistance Director for the USDA’s new Meat and Poultry Processing Technical Assistance Program (MPPTA), shared a variety of resources for meat processors, and offered some tips to help potential grant applicants prepare.
THE GOOD MEAT BREAKDOWN
This webinar guided producers on how to better reach customers interested in finding, buying and cooking their products. Hosts Camas Davis and James O’Donnell of the Good Meat Project walked through the biggest points of confusion keeping consumers from buying meat from small, local producers. They shared tools and strategies to improve marketing and communications.
