Just as the color promotion of food for Healthier US School Challenge suggests, dark green food are packed with nutrients, and broccoli is no different. Broccoli florets that have a dark green, purple, bluish-green color are rich in beta-carotene and vitamin C, even more so than broccoli that is lighter in color. Being so nutrient rich, broccoli is sometimes referred to as the “crown jewel of nutrition”. It can also grow in a pretty hearty way, with over 30,000 broccoli plants growing on one acre.
