Lentil Chili

This recipe is adapted from USDA recipe "Chili con Carne with Beans" by Kent Getzin, Foodservice Director at Wenatchee School District. The key is to retain the character of the lentils.

Washington State ranks third in the nation in the production of lentils, most of them grown in eastern WA.

Lentil Hummus

Traditional hummus recipe calls for Garbanzo beans, but lentils make a great one as well. With no over-night soaking requirement and short cooking time, dried lentils are perfect one to try if you are new to dried pulses. Plus, hummus can be made a day ahead and chilled for the next day service.

Some school districts found that the students receive better when you call it a "dip" rather than "hummus".
